Just A Little Whipped-up Cook-up

Today I whipped up a little something for lunch:

No I didn’t cook a chopping board and a knife.

I woke up, I was hungry, so I decided to whip up a little something to feed my rumbling tummy. I was actually planning to cook this since two days ago, but there was supposed to be real tomatoes and pickles for this.

These ingredients make a Filipino dish called Chicken Apritada. Which is basically chicken stew… or really just a chicken dish with vegetables… It has:

  • Tomatoes
  • Potatoes
  • Carrots
  • Capsicum (red bell pepper)
  • Peas
  • Olives (optional) This adds to the taste of the tomatoes.
  • Pickles (optional). This adds to the taste of the tomatoes.
  • Salt and pepper
  • Paprika
  • Parsley leaves/flakes (optional)
  • A little water
  • Onion
  • Garlic
  • Vinegar (optional). I only put about a table spoon of apple cider vinegar because I only had one can of diced tomatoes and canned tomatoes aren’t very sour. You definitely don’t have to put this.
  • Soy sauce
  • Fish sauce (just a little, and it’s also optional, but it makes everything taste better)
  • And don’t forget the chicken breasts
  • oil (you can use peanut oil or something, but I used tallow)
  • Other stuff you think will make this taste awesome
  • Tomato paste (aka the stuff you put on spaghetti. Again, only because I didn’t have any tomatoes. I’m obsessed with cooking stuff with a lot of tomatoes)
  • Cheese to make it a bit thick (I forgot to put cheese, but my Mom said to put cheese and hot water in a bowl to melt it and then put it in)

I chucked the chicken in the microwave to defrost for about 8 + minutes while I browned the onion and the minced garlic in the pot. When I liked the brownness of the onion and garlic, I seasoned everything to give a chicken a little bit of a marinade. I put in the paprika, the salt and pepper to taste, and the canned tomatoes.

I don’t think I cooked the tomatoes long enough though. Try cook it for about 10-15 minutes, but don’t let it burn.

I chopped up all the vegetables and set them aside.

I diced the chicken and added it into the pot. When it started to boil and the chicken was almost ready, I put in the carrots.

I always like my chicken and my vegetables all the same size. So my carrots are all different sizes because I’m so used to cutting them into tiny cubes! Argh.

I put in some boiled water from the kettle into the pot to make it a little soupy as well. When the carrots were a bit soft, I put in the capsicum (red bell pepper), and after a while the carrots then the peas and olives. This is about the time you should put in your small sized diced up pickles as well.

It was my first time making this, and my Mom is the MASTER of making this meal, so I had a lot to live up to! πŸ˜‰



Eat it with rice. Food is always better with rice. πŸ˜‰

A Day In The Life Of A Homeschooler

I wanted to get an early start today, so I was up and sorting my clean clothes which had been piled on the foot of the bed. That was at 7:15 to around 7:30. After that, I trooped into the kitchen and filled up the pitchers of rain water. I like to surprise my Mom when she wakes up sometimes, so I filled up the ice trays she had left on the bench the night before. I went outside and filled up the pitcher with water from the tank water tap; my Mom prefers rain water. πŸ™‚

I cooked some oatmeal (porridge) and by that time Mom and Dad and my brothers and everyone else were awake and ready to leave for school/work.

For some horribly horrible reason, my arm started hurting near my shoulder. When I moved it a lot of pulled or lifted heavy things, it hurt. It doesn’t hurt as much now, though.

My Mom moved some furniture around the house and my brother and I had a quick game of soccer and basketball. The soccer game was shocking play. I mean I was terrible goalie and so was my brother. πŸ˜›

Then I went ahead and did my school, then I remembered it was Thursday. And you guys know what Thursdays hold for you? Yup! Thursday Cookups! πŸ˜€ Well, I have been slacking of the past few weeks… Y’ know, I didn’t post for it….*tries to hide shame* But today I made a really quick and easy meal.

You’re probably wondering, “Whaaaat? Of all the things to cook, why broccoli?”

Well, for one, I happen to like broccoli. For another, I had no idea of anything else to cook, and for a third thing, it was quick and easy and that’s what we had in the fridge. πŸ˜‰

I’ve always wanted to cook fancy things that are always hard to make, but my Mom came up with the idea, so I took it. I cut up the two broccoli heads we had, and chucked them into the stir fry pan. I made the mistake of not sauteing the onion and garlic first, so I got some more into a separate pan and fried them till they were brown. Then I added them in. I fried it with butter. I added soy sauce, a little bit of chicken broth that my Mom made (I have no idea why I did that; I just did. Don’t judge XD ), salt and sesame oil. It was actually pretty good!

My brother ran to my Mom and said, “Mom, can you make more of the broccoli stuff? It’s really good! Superb! Amazing! Fantastically deliciously delicious!”

Ok, so I added in the last 5 words. But he really liked it. So I guess that’s a bonus for me! It was pretty good, if I do say so myself. πŸ˜‰

After that, I ate my masterpiece, cleaned up a little after myself and now I’m sitting on this beanbag surrounded by books with the sun streaming in the window behind me.
